An ice making machine has one or more combined evaporator and shaped-ice making assemblies (54), each arranged in a generally vertical orientation and ice make-up water is communicated to a manifold arrangement (52) disposed above each of the assemblies and from which it cascades over the opposed surfaces of the assembly to freeze within the pockets or recesses thereof. The combination evaporator and shaped-ice making assemblies are so designed that the heat transfer between the evaporator coils and the water freezing within the ice pockets is such that substantially symmetrically-shaped (eg "pillow" shaped) ice products are formed within the pockets. Preferably an evaporator conduit (100) is arranged in a generally serpentine configuration and is provided with a plurality of heat transfer elements (110) which are disposed interjacent spaced parallel sections of the conduit, with the entire assembly of the evaporator conduit and heat transfer elements having a plastics material molded thereon.
