Stereospecific esterification of a mixture of natural and xenobiotic amino acids one of which is in the L form and the other in the D form, characterised in that: - the esterification is performed on amino acids protected on the amino functional group, the said protected amino acids being in solution in the esterifying alcohol, - the esterification is performed in the presence of a small quantity of water and at a pH of between approximately 3 and 6, - and the operation is carried out in the presence of papain.
