Water-sol, granular starch derivs. have formula Starch-O-Y, where Y has formula or is a cationic gp., M is an alkali metal, R is 1-6C alkyl or alkali metal, R' is 1-6C alkyl or H, n = 0-4, and Starch represents the residue of a starch molecule from which is not 1 OH gp. has been removed. The granules are not doubly refracting and have a degree of substitution of is not 0.005. The derivs. are prepd. by reacting granular starch with suitable reactants in an alkaline medium, in presence of 40-100% of water, based on the wt. of dry starch. The reaction does not require organic solvents, complex appts. or critical reaction conditions. The prod. is obtd. as a solid, requiring no isolation. The starch derivs. can be used for, e.g. coating paper and textiles. The cationic starch derivs. are flocculating agents.
