According to the invention the toxic organic contaminants of water (phenols, amines and other organic molecules) are removed by the use of an enzyme-protein pair supplied by a biological waste consisting of blood (for example bovine or other). The water is brought into contact with a blood haemolysate containing jointly cross-linked proteins, at the same time as a peroxide (H202 or other). The treatment takes place in an open or closed reactor and in a stationary or mobile bed or else in a fluidised phase.
