Method for preparing diet or dietetic products based on whole turkey, whole rabbit, pieces of veal, whole hare, whole roe-deer or pieces of roe-deer, whole boar or pieces of boar, all these so-called lean meats having the maximum of fat removed, with cooked calves' feet and cooked skins (rinds) from which the fat has been removed, in order to obtain an agreeable flavour despite the absence of fat. To all these products I have added either tomato concentrate, or stoned prunes marinated in armagnac or cognac, and whisky, which removes sugar from the prune, with onion, garlic, bouquet garni, red or green pepper, virgin olive oil and salt and pepper seasoning, and the whole has been simmer-cooked for a very long time.
