According to the invention, the oxidant flow rate D is modified in an iterative manner as follows: a. The increase DELTA T and the rate of increase DELTA T/ DELTA t of the measurable variable with respect to time over a given period of time are determined; b. If this rate of increase with respect to time is lower, in absolute value, than a predetermined threshold, thus revealing a quasi-stationary state of the non-measurable variable, the operating parameter is adjusted according to a technique of extreme regulation, by varying the operating parameter D by means of a first increment DELTA D in the direction corresponding to a minimisation of the rate of increase DELTA T/ DELTA D of the measurable variable with respect to the operating parameter; c. If, on the contrary, this rate of increase with respect to time exceeds, in absolute value, the predetermined threshold, thus revealing a considerable variation in the non-measurable variable, the operating parameter D is varied by means of a second increment DELTA D' in the direction corresponding to the increase DELTA D' of the measurable variable, independently of the direction of change of the rate of increase DELTA T/ DELTA D' of the measurable variable with respect to the operating parameter.
