PURPOSE:To obtain the titled food, having good preservation quality and flavor and readily eatable with prevented drying in the early stage, by covering each cooked and vinegared rice ball and sliced trout with a long bamboo grass leaf by a specific method and filling a suitable number of the resultant covered rice balls with the sliced trout in a container. CONSTITUTION:A cooked and vinegared rice ball 2 and sliced trout 3 are placed on a long bamboo grass leaf 1 and both sides of the bamboo grass leaf 1 are bent. The leaf tip part 4 is then bent and protruding parts 6 formed at this time are placed on the bent part 7. The back leaf part 9 is then bent to complete covering of the cooked and vinegared rice ball 2 and sliced trout 3 with the bamboo grass leaf 1. Each piece of of the covered, cooked and vinegared rice ball 2 and sliced trout 3 is further fixed by a fixing tool 10, e.g. rubber band, etc. Pieces of the resultant HITOKUCHI SASAMAKI MASUNO SUSHI (vinegared rice and trout, wrapped in a bamboo grass leaf and eatable at one mouthful) in a suitable number are subsequently filled in a container 11 to afford the aimed food.
