摘要

PURPOSE:To obtain the titled readily purifiable dianhydride, having remarkably high productivity and reaction yield and useful as low-caloric and hardly cariogenic sweetener, by reacting an enzymic solution with levan or phlein. CONSTITUTION:(A) Levan fructotransferase produced by a microorganism of the genus Pseudomonas, preferably Pseudomonas.fluorescens MZ No.949 (FERM P-9235) is reacted with (B) levan or (C) phlein to afford the aimed dianhydride expressed by the formula. Furthermore, the component (A) is preferably obtained by cultivating the above-mentioned microorganism capable of producing the levan fructotransferase in a culture medium at pH 5-8 containing, e.g., a fructose polymer having beta-2,6-bonds (e.g., levan or phlein).
