PURPOSE:To readily prevent damage from freezing and frost injuries caused by ice nucleation-active bacteria to field crops with high controlling effects, by diverting a proteolytic enzyme, such as pepsin or papain, using a chemical method. CONSTITUTION:A proteolytic enzyme (e.g. preferably an enzyme having about a neutral optimum reaction pH and short reaction time in pepsin, trypsin, rennin, papain, ficin and various fungal or bacterial proteases) is applied to prevent freezing and frost injuries which are freezing injuries caused by low temperatures beyond freezing resistance of field crops in winter and frost injuries crops caused by late frost in spring or autumn or the first frost of the year to the field crops. Furthermore, the above-mentioned enzyme is used as a composition containing the proteolytic enzyme as an active ingredient for preventing the freezing and frost injuries to the field crops. The proteolytic enzyme is preferably used on leaf surfaces of the field crops which are objects.
