The present invention relates to a novel method for preparing a meat food using meats from Ovinae, such as sheep or lambs. This product is obtained by means of a special preparation method including several stages, some of which are drawn from conventional meat processing operations and others which are drawn from operations particularly designed in order to succeed in obtaining an original final product with a firm flesh, having a texture and a dark-red appearance like "Grison" meat. The preparation method includes a first curing (drying) stage, outside the abattoir, a specific brine inoculated by pumping, resting flat to afford good dispersion of the said brine and, after drying and boning, a smoking stage, the original feature lying in the choice of the woods employed which are from the Pinaceae, exotic and Fagaceae families. This product which is obtained can be preserved perfectly well and increases the range offered by pork butchers (delicatessen dealers) and caterers, permitting the use of adult sheep meats.
