PURPOSE:To easily increase concentration of polysaccharides by filtering an extracted solution of polysaccharides using ultrafiltration membrane or reverse osmosis membrane under a fixed pressure. CONSTITUTION:An extracted solution obtained by extraction of raw material for extracting water-soluble polysaccharides having 0.1-3.0wt.% polysaccharides concentration is filtered using ultrafiltration membrane or reverse osmosis membrane under a fixed pressure (generally in the range of 0.5-80kg/cm2) and concentration of polysaccharides in said extracted solution is concentrated to the range of 0.3-25wt.%. On the other hand, an extracted solution made to lower molecular weight having =300g/cm2 jelly strength in a method of NIKKANSUI (Japan agar-agar manufacturing fishery association) after gelation of extracted solution obtained by extraction of raw material such as agaragar, carageenan or furcellaran is filtered using reverse osmosis membrane and made the jelly strength to =300g/cm2, preferably 400g/cm2, thus use of the extracted solution having lowered molecular weight is made to be possible. By said process, fractionation to various polysaccharides having different molecular weight is made to be possible, thus various products of polysaccharides are obtained.
