Maltooligosaccharide-forming amylase which is immobilized on a porous carrier having characteristics of (a) an affinity of enzyme to carrier is 80 percent or more and (b) a specific surface area of pores having a diameter of 100 A or more is from 20 to 300 square meters per gram.;Maltooligosaccharide is produced by feeding starch hydrolizate to a reactor charged with the above immobilized maltooligosaccharide-forming amylase at a weight based space velocity per unit activity of the immobilized enzyme of 1×10-4 to 3x10-2 hr-1 (IU/g)-1.
