The invention relates to a method for taking off floating material, in particular fats and other highly viscose oils, from gravity separators via an overflow edge. Separators which function with a take-off channel which can be lowered or a weir cannot be completely emptied because the clearing pressure is lacking. This disadvantage is now eliminated in that the space taken up by the floating material layer, which rises owing to damming of the water level, is spatially concentrated towards the overflow end. As a result, a sufficiently large clearing pressure is formed. A rigidly arranged inclined baffle is preferably used which ends above the overflow edge.
