Device for processing a piece of dough which is composed of two layers of dough and an intermediate layer of fat for items made of puff and flaky pastry, the said device comprising at least one unit which is composed of a roller device and a folding and layering device which is arranged downstream of the latter, has a reciprocating folding channel and deposits the folded layer of dough on a discharging belt which moves parallel to the pivot axis of the folding channel, one or two units being arranged on a block-like underframe, the folding channel which is directly connected to the discharging side of the rolling device being integrated with the said two units.
