The present invention relates to a process for the specific and sensitive enzymatic assay of extremely low concentrations of hydrogen peroxide present in a medium or released from an organic compound by an enzymatic process, thus enabling a specific and sensitive enzymatic assay of extremely low concentrations of the said organic compounds. The process for assaying hydrogen peroxide is carried out in the presence of NADH and a peroxidase in an appropriate buffer solution, by determining the consumption of NADH by spectrophotometry, the stochiometric ratio between the quantity of the NADH consumed and the initial quantity of hydrogen peroxide being greater than or equal to 2, thus permitting, by amplification, the detection of very low concentrations of hydrogen peroxide.
