PURPOSE:To provide the title machine so designed that a thick skin of swellfish is set in a spread fashion on a revolving drum and a cutting edge is put to reciprocating motion in the direction rectangular to the revolving direction of said drum, thereby ensuring the skin to be thinly cut without spattering cut tailings. CONSTITUTION:The end of a thick skin 34 of swellfish is set on a recess channel 2 of a revolving drum 1 with a pressing plate 4 to spread said skin 34 on the drum 1. The tip 13 of a cutting edge 12 is made to correspond with a spine of the thick skin 34, and the position of the tip 13 is set. Thence, the motor for cutting edge is revolved in high speed, while the motor for said drum in low speed. Thus, the cutting edge 12 is put to reciprocating motion left and right in high speed, and the thick skin 34 is cut with a thickness of 0.1-0.3mm together with the spine by the tip 13 in such a state as to be pressed with a pressing roller 29.
