A cheese press consists of a sieve mounted between a base and a cover and located in a trough. A power unit enables the cheese mass to be squeezed inside the sieve between the cover and base. During the pressing stage the sieve body is released from the fixed position on a support and moves freely between the cover and base. The process involves pouring cheese onto the base within the sieve, the cover is positoned over the cheese and a first pressing stage is performed with the sieve rigidly connected to the support. In the second stage press force is reduced and the sieve disconnected from the support. USE/ADVANTAGE - The appts. is used for clothless pressing of cheeses and achieves uniform pressure on the cheese, even at the edges.
