PURPOSE:To provide a process for treating raw soy sauce without generating heat-treatment dreg. CONSTITUTION:The objective treating process comprises the addition of silica sol to heated raw soy sauce or the heating of raw soy sauce after addition of silica sol or the heating of raw soy sauce while adding silica sol to the sauce.
