An evaporator plant in which fluid is conc. includes a chamber in touch via a heat exchanger with a heat source, and in which vapour rises to leave concentrate before being compressed and heat then recovered. The vapours leave through apertures whose cross-section area is directly proportional to the level of concentrate in the collection pan and pressure loss. Cross-sectional area varies with concentrate level, directly proportional to the effective temperature difference between the heating chamber and the vapour chamber, and the vapour chamber in the heat exchanger. Mass flow of vapour is directly perpendicular to the level of concentrate. During the start-up phase, the cold air in the evaporator is compressed and transferred via a bypass and is then exchanged between the heating chamber and vapour chamber until the working temperature has been reached.
