The invention relates to a hot air drying furnace for dehydrating fruit or vegetables arranged on trolleys with superimposed metal trays, of the type comprising a drying tunnel defining a width for the passage of at least one row of trolleys in line one behind another, means for blowing hot air and means for taking the air back up. According to the invention, the means for blowing the air and taking it back up respectively comprise a blowing caisson 6 and a take-up caisson 5 which are longitudinal, arranged laterally, each along one longitudinal side of the tunnel, each of these caissons 5, 6 being provided with a respective blowing 6a, and take-up 5a side extending along the longest length of the tunnel and including openings extending over a height of the said tunnel which corresponds to that of the trolleys, so as to deliver a uniform flow of hot air transversely towards these trolleys and to suck out the air which has passed transversely through the tunnel.
