The invention relates to a process for the manufacture of tartaric acid from bitartrate arising especially from the by-products of wine production. The process consists in neutralising the bitartrate for the purpose of converting it into a soluble neutral tartrate and of dissolving it in aqueous solution, and then in making this solution circulate in an electrometathesis reactor 7 formed of semi-permeable ion-exchange membranes and of a system for generating protons, the said reactor being subjected to a continuous electrical field, and in collecting, in one of the compartments of the reactor, the solution of tartaric acid formed by metathesis. A pure solution is collected, the concentration of which can be adjusted to the desired value. IMAGE
