A process is described for the continuous fermentation of saccharides into alcohol by means of a flocculant microorganism as alcoholic fermentation microorganism. This process comprises at least two steps; in the first step, a stirred type cell propagation reservoir (1) is used, equipped with an apparatus (27) for measuring the respiratory quotient, where appropriate, with an apparatus for introducing oxygen, with a device for controlling temperature, and with an apparatus (3) for separating the cells; the amount of cell propagation and the alcohol yield of the fermentation are adjusted by means of the respiratory quotient (RQ) as a guide, such that a flocculant microorganism with a substantially high fermentation activity develops continuously, and, in the second step, the said flocculant microorganisms which have developed are introduced into a fermentation reservoir (2) for the continuous production of very concentrated alcohol, equipped with an apparatus for introducing oxygen, a device for controlling the temperature and an apparatus (33) for separating the cells.
