PURPOSE:To prepare a bean curd having uniform size, by receiving a mold box from a conveyor line directing the opening of the box sideways, intruding a tip of a longitudinally slicing blade into the mold box to longitudinally slice the bean curd in the mold box and taking the bean curd out of the mold box. CONSTITUTION:A mold box B containing a formed and cooled bean curd D is received from an intermittently circulating bean curd-preparation conveyor line A while directing the opening B2 of the box sideways in a stage where the conveyor line A is moving vertically downward. A plurality of blades 13 are introduced into the mold box B to cut the bean curd into pieces of bean curd having a prescribed width. The mold box B is returned to the horizontal state and gaps are formed between the bean curd pieces by the motion of the blades. A table plate 5 to hold the bean curd pieces is cleared and the pieces are dropped on the table plate. Bean curd having uniform size can be prepared by this process while preventing the damage and collapse of the bean curd pieces.
