PURPOSE:To suppress the blackening of the normally white surface of the body of olive flounder and flatfish and to obtain cultured olive flounder and flatfish having excellent whiteness and high commercial value by using a cultivation water tank having rough or uneven inner bottom surface. CONSTITUTION:Fertilized egg of olive flounder or flatfish is hatched in a water tank and the young fish is bred exclusively with rotifer and artemia until 35 days old and the fish of 35 to 57 days old is bred in a water tank made of fiber-reinforced plastic(FRP) having uneven inner bottom face covered with a net-cage made of nylon yarn, etc., or in a concrete water-tank having roughened inner bottom face. The olive flounder or flatfish cultured by this process is free from generation of black part on the normally white surface-side of the body or, if any, extremely low blackening degree and has excellent whiteness and high commercial value.
