ABSTRACT OF THE DISCLOSUREA noncorrosive aqueous composition for cleaning a heatedsurface subject to soiling with food soils while maintaining thesurface at a temperature greater than about 275°F. Awater-soluble, high boiling organic solvent, a strong base, and asurfactant are combined with water and applied to a heatedsurface while maintaining the surface at a temperature greaterthan about 275°F. The heated surface can be rinsed with water oran aqueous solution as soon as is convenient, which may be withina time period of less than about five minutes after theapplication of the aqueous composition to the heated surface.
