Treatment of xanthan gum (XG) to improve the filterability of its aq. solns. is effected by treating an aq. XG soln. contg. at least 0.01 equiv./l of dissolved alkali and/or alkaline earth metal salts with a combination of a polygalacturonase (I) and a protease (II).
