- The invention relates to a method and a device for applying microwaves to products especially for thawing, heating and drying. - The method of the invention is characterised in that it consists in placing the product or products to be treated on at least one bed or sheet inside an appropriate closed container (1) and in moving a microwave source (5) above and at a specified constant distance from the said bed, so as to sweep the entire extent of the bed in at least one return journey, the parameters for rate of displacement of the source, number of passes, and intensity of the microwave radiation being adjustable as a function in particular of the type of product and of the effects sought. - Application in particular to the thawing and fermentation of bakery and Viennese pastry products.
