amines are reacted, such as methylamine, with substances such as reducing sugars in solvents based on amine or amine / water for preparing N-alkyl polyhydroxy amines. therefore glucose is reacted with methylamine and the resulting adduct is hydrogenated to obtain the N-methylglucamine. then reacting the N-alkyl polyhydroxy amines can one with fatty esters to provide polyhydroxy fatty acid amides which are useful as detersive surfactants. Thus obtainable of detersive surfactants from non-petrochemical precursors such as sugars and sugar sources such as corn syrup, and fatty acid esters can be derived from various fats and oils.
