To remove the sediment from fermentation in bottles, where the bottles are head-down, it is frozen to form a plug for extn. by passing a coolant fluid into the bottle head by a feed tube. It is held away from the liquid in the bottle, so that the sediment is frozen from within into a removable plug. The coolant fluid is pref. liquid air or nitrogen. A tubular section is secured to the crown cork at the side towards the fluid within the bottle, closed at the inner end and open at the outer end, to take the coolant fluid, or the tube section is a cooling spiral for the coolant to flow through. The tube section has the shape of an inwards closed bowl, to take the coolant fluid delivered by a feed tube, and can be shaped as part of the crown cork. The feed tube for the coolant is inserted into the tubular section, and has axial openings distributed along its length for the coolant to flow against the inner surface of the tubular section. ADVANTAGE - The method gives a rapid freezing of the sediment into a plug, independent of the ambient temp., and without requiring additional appts.
