The subject of the present invention is a process for producing anthranilic acid and methyl anthranilate by using mutants of Saccharomyces cerevisiae and the use of these mutants in the preparation of fermented drinks. BR/ According to the invention, a mutant of a yeast strain Saccharomyces cerevisiae auxotrophes is used for tryptophan, blocked in the step catalyzed by 5-P-ribosylanthranilate transferase and having an anthranilate synthase insensitive to retroinhibition by tryptophan.
