PURPOSE:The titled food suitable for bread food, having high nutritive value and improved flavor, containing a protein component, edible fats and oils, vegetable and fruit subjected to acetic acid fermentation, a phosphate and/or sodium citrate. CONSTITUTION:A spread food comprising (a) a protein component (rennet casein, soybean protein, etc.), (b) edible fats and oils, (c) treated vegetable and/or fruit subjected to acetic acid fermentation, and (d) a phosphate and/or sodium citrate as main components. A weight ratio of the components (a):(b):(c) is 1:0.7-12.0:3.3-15, and the food contains 0.3-3.5wt% component (d) based on total amounts of the components (a)-(c). The food is optionally blended wtih water, salt, organic acid, gum, starch, edible emulsifying agent, spice, etc.
