PURPOSE: To produce a powdery product based on eggs and reduced in fact and cholesterol content. CONSTITUTION: The powdery starting matter is extracted by =200 bar and at =70 deg.C through the use of liquid propane. The powdery product based on eggs, having satisfactory feeling characteristics and reduced in fat and cholesterol content is produced almost without removing phospholipid, particularly lecithin.
