PURPOSE:To provide a process for extracting a water-soluble component from a plant with a supercritical fluid in high efficiency, especially a process for extracting D-gluco-L-glycero-3-octulose which is a water-soluble octose existing in laurel leaf and other water-soluble components in high efficiency. CONSTITUTION:Carbon dioxide is used as a supercritical fluid and water is added as an entrainer to obtain a mixed fluid imparted with polarity. Supercritical carbon dioxide is a nonpolar solvent scarcely dissolving water-soluble components, however, the water-soluble components can be dissolved in the mixed fluid and the extraction efficiency can be improved by the addition of water. For further improving the extraction efficiency, a hot-water extraction is carried out after the above operation.
