Wine yeast CECT 1973, method for obtaining it by recombinant DNA techniques and application thereof as a wine yeast for industrial use, useful for improving the bouquet of wines. This invention proposes the expression in wine yeasts of genes of other organisms. Specifically it relates to the expression of one of the genes which code for enzymes able to break down the constituent polymers of plant cell walls, and the expression of which in the must influences the bouquet of the wine. The method is based on the cloning of the cDNAs of these genes, the construction of gene fusions between these cDNAs and constitutive high-expression promoters in wine yeast, and the introduction of these recombinant constructions in strains of wine yeasts for industrial use. Micro- winemaking experiments with these recombinant wine yeasts demonstrate the production of a wine which is improved in its bouquet profile. IMAGE
