The young asparagus plants which are cultivated in cultures are stored for simulating winter conditions in a cold store. The asparagus seedlings are exposed to a nutrient solution in dependence on a calculated harvesting period which is independent of the seasons, in a light-protected hot-house in order to force on the shoots. The temperature in the cold room is preferably between 0.5 and 1 degs. C and the relative humidity is at least 95%. The seedlings can be stored in the cold store in large crates whose base surfaces are the size of Euro-pallets. ADVANTAGE- Fresh asparagus can be offered all year round.
