Sauerkraut is made using red cabbage. Pref. the red cabbage sauerkraut is spiced with bay leaf, juniper berries, cinnamon sticks, cloves and caraway seeds. Pref. the sauerkraut is fermented with a 10% pickling brine for 10 weeks and a spice bag holding equal amts. of the additional spice ingredients in a total amt. of 0.5-0.7% of the wt. of red cabbage is introduced after 6 weeks. ADVANTAGE - The prod. has a taste almost identical to that of sauerkraut made with white cabbage and provides a prod. with a red colour which is attractive to the eye and the palate. In an example for 1 kilo of sauerkraut, 200 g sliced onions are sweated in 80 g bacon rind and 50 g pork dripping, then the cabbage is added lightly seasoned with salt, pepper and sugar, and stirred 0.25 l red wine is added and the mixt. cooked on a low flame for ca. 40 mins. and finally seasoned with 100 ml red wine vinegar, salt, pepper, and sugar.
