Prepn. of an anti-radical enzyme compsn. of plant origin, comprises (a) treating cereals, e.g. wheat germ, with a liq. alcohol, pref. (m)ethanol, to extract the lipids and leave the proteins and enzymes in the filter-cake, (b) recovering the cake and treating it with water contg. 2% of NaCl to extract the proteins and enzymes, (c) adding a liq. alcohol, pref. (m)ethanol, to the extract, to ppte. the proteins and the enzymes, and (d) vacuum-drying the ppte. to obtain a lyophilised compsn. Pref., the anti-radical enzyme compsn., superoxide dismutase (I), peroxidase, and catalase, all of vegetable origin, are claimed, as are compsns. contg. (I) and catalase, or (I), peroxidase and a reducing substrate specific for peroxidase. USE - The compsn. can replace animal (esp. bovine) superoxide dismutase.
