The invention relates to a specific exchanger for processing the entire vintage continuously, at variable rate, without trituration, protected from the air and at variable temperature. The inner tube for passage of the vintage consists of a series of straight tube sections having a length of approximately six meters (1), connected together by sections formed as crossheads (2). These crossheads, bent into a semicircle having a radius greater than five times the nominal diameter of the tube (3), make it possible to limit the head losses when the product passes through, while avoiding any trituration. The outer tube (4), which surrounds the straight sections of the tube exchanger conveys the heat-exchange fluid in antiparallel or parallel flow with respect to the vintage. IMAGE
