PURPOSE:To form a mesh pattern, without using hand-work, on the surface of a strudel which is a kind of pie. CONSTITUTION:Laminated pie dough is rolled to form a dough sheet, the sheet is folded and rolled again and the process is repeated to prepare a pie dough. In the above process, the extension degrees of the dough in two perpendicularly crossing directions are controlled in such a manner as to obtain a finally rolled dough having a lateral elongation larger than the elongation in the transfer direction. Incisions 91 are applied in staggered state along the transfer direction of the dough and a heaped filling is baked in a state covered with the incised dough sheet.
