PURPOSE:To always obtain bean curd of constant quality by continuously adding a coagulant to soybean milk while monitoring a change in properties of the soybean milk and stopping the addition of the coagulant after the passage of a prescribed period from the time of starting the coagulation of the soybean milk. CONSTITUTION:Soybean milk contained in a reaction vessel 10 is stirred with stirring blades 14 while being kept at a constant temperature and a coagulant 30 is simultaneously and continuously fed from a coagulant vessel 28 through a pump 32 and a transporting pipe 34 at a prescribed flow rate. A change in torque applied to the blades 14 is then measured with a torque sensor 20 and a torque meter 22 mounted on a driving shaft 16 and inputted through a digital multimeter 24 to the CPU 26. The change in torque value is continuously monitored to sense a point (A) when the torque value is rapidly increased in gelation of the soybean milk. The point (A) or a point (B) when the torque value is maximized is taken as the reference and the pump 32 is stopped with a pump controller 38 at a point (C) after the passage of a prescribed time from the reference point. Thereby, the injection of the coagulant 30 is stopped and the stirring is stopped at a point (D) after a prescribed time.
