PURPOSE:To provide a novel amylase which forms a product mixture containing high content of maltohexaose and maltoheptaose from starch and is usefud as a composition for food, beverage, cosmetics, medicines or molded products. CONSTITUTION:A mylase which is obtained by culturing Alcaligenes latus D2271 and has the following properties: (l) it acts on starch to form maltohexaose and maltoheptaose, but substantially causes no decomposition of oligosaccharides lower than hexaose and heptaose, too; (2) the optimal pH is about 5.0 in the presence of calcium ion; (3) the optimal temperature is about 70 deg.C in the presence of calcium ion; (4) the pH stable zone is from about 4.5 to 10.5 in the presence of calcium ion; (5) it is stable up to about 60 deg.C in the presence of calcium ion; (6) the molecular weight is 43,000+ or -3,000 dalton (SDS-gel electrophoresis) and (7) the isoelectric point is 7.6+ or -0.5 (according to the ampholyte- containing electrophoresis).
