PURE CULTURE OF SOLID KOJI AND APPARATUS THEREFOR

PURPOSE: To effect pure culture of KOJI without contamination by effecting the KOJI culture in one vessel without transfer of the culture mixture instead of the conventional culture system where a plurality of monofunctional equipment for one process are connected in series. ;CONSTITUTION: In a rotary pressure drum hung on the stationary main shaft, the treatments of the substances for making KOJI are effected, namely water spray, steaming (may be pressurized), cooling (the latent heat of vaporization may be utilized by reducing the pressure in the drum) is effected uniformly, as the drum is rotated optionally, then the substance is inoculated. After inoculation, germ-free air after passing through the air filter, fan, air conditioner is fed through the main shaft to make KOJI. At the prescribed times, the drum is rotated to softly crush the blocks of KOJI for uniform aeration whereby clean KOJI can be produced.;COPYRIGHT: (C)1995,JPO
