The present invention relates to the use in cosmetics of the degradation products of partially acetylated chitosan, the said use being characterised in that it involves a cosmetically active substance chosen from the group consisting of (a) oligosaccharides and (b) polysaccharides having a mean molecular weight determined by capillary viscometry of less than or equal to 300,000 and obtained by enzymatic hydrolysis of partially acetylated chitosan by means of an enzyme prepared by culturing a strain belonging to the Thermoactinomyces family. It also relates to the process for the preparation of the said cosmetically active substance, on the one hand, and to the said cosmetically active substance as a new industrial product, on the other hand.
