PURPOSE: To provide both a method for producing a vegetable saute and a roasted flavor by which a food material made of a vegetable as a main raw material is continuously roasted and a roasted flavor is simultaneously recovered and an apparatus therefor. ;CONSTITUTION: This method for producing a vegetable saute and a roasted flavor is to mix up and transfer a food material made of a vegetable as a main raw material in a heated cylinder (1), recover a vaporized component of the food material from an opening of the cylinder (1) and cool and liquefy the vaporized component.
