PURPOSE: To obtain a bitter taste-reducing agent having an excellent bitter taste-reducing effect on a medicine, a food, a cosmetic, etc., excellent in safety and capable of being admixed with a food, etc., without changing the taste essential to the food. ;CONSTITUTION: This bitter taste-reducing agent is composed of a composite material containing a phospholipid and a water-soluble saccharide, preferably a sugar alcohol such as D-mannitol or a disaccharide such as lactose or sucrose. The phospholipid contains preferably ≥20wt.%, especially preferably ≥50wt.% acidic phospholipid containing ≥50wt.%, especially ≥70wt.% phosphatidic acid. This composite material can be prepared by blending a phospholipid, a water-soluble saccharide and water, emulsifying the resultant mixture and drying the resultant emulsion or by dissolving or dispersing a phospholipid in an organic solvent, adding a water-soluble saccharide thereto, mixing them with stirring and drying the resultant mixture. The volume-average particle size is preferably 0.05 to 10μm, especially 0.3 to 1μm in an aqueous dispersion state.;COPYRIGHT: (C)1995,JPO
