PURPOSE: To provide a powdery starch soluble in cold water and hot water with re-dispersed solution capable of providing a gel having an optimum strength by jet-cooking a starch slurry with steam, and spray-drying the resulting dispersant or aqueous solution. ;CONSTITUTION: A slurry or paste consisting of starch and water is jet cooked with steam at a temperature sufficient to solubilize or perfectly disperse the starch. The dispersant or solution at a high temperature and under a high pressure is immediately carried and put into the nozzle of a spray drying chamber and sprayed. The sprayed solution is dried to a desired moisture content level within the spray drying chamber. Finally, the dried starch is recovered as water dispersible or water soluble powder, whereby the objective non-granular matter containing 40% or more of amylose which is pregelatinized and spray dried is provided.;COPYRIGHT: (C)1990,JPO
