The process is based on the ageing of wine in bottles equipped individually inside with pieces of wood of controlled quality and dimensions during a maceration period in a sealed bottle. Ageing is monitored by controlling the type of wood used and the mass and outer surface area of said wood. The maceration period of the wine in a sealed bottle with the piece of wood inside it will extend preferably to a minimum of 3 months.
