PROBLEM TO BE SOLVED: To obtain a hydrolyzed product usable in the food industry without the need of using any acid or enzyme and applicable to e.g. modification of soybean protein, by hydrolyzing a material having peptide linkage in an aqueous system under reductive conditions in the presence of molecular oxygen and iron ions. ;SOLUTION: A material having peptide linkage (e.g. powdery soybean protein) is hydrolyzed in an aqueous system under reductive conditions such as in the presence of at least one kind of reducing agent selected from ascorbic acid, erythorbic acrid and their salts, sodium bisulfite and sodium hydrosulfite car in an electrically reductive state, in the presence of a peptide linkage-hydrolyzing agent such as molecular oxygen or trivalent iron ions in the form of ferric chloride at 37°C for one hour under agitation with a magnetic stirrer, thus obtaining the objective peptide linkage-hydrolyzed product applicable to e.g. modification of proteins such as improving the foaming or emulsifying powder of soybean protein.;COPYRIGHT: (C)1997,JPO
