PROBLEM TO BE SOLVED: To bake bread and cakes, etc., puffily and tastefully without an unevenness in baking, in a short period of time by a method wherein a partitioning wall with an air leading part is provided between a baking chamber and a plate fan, and between the partitioning wall and the side wall of the baking chamber, a ventilation part to make hot air from the plate fan pass to the baking chamber, is formed. ;SOLUTION: Hot air of a baking chamber 100 passes through an air leading port 171 on a partitioning wall 17, is drawn by a suction part of a plate fan 3 together with hot air from a blast burner 25, which is introduced from hot air introduction ports 241, 242 on a hot air introduction duct 24, and is blown out. The blown out hot air passes through a ventilation part on the side of the partitioning wall 17 and is fed into the baking chamber 100, and hot air in an oven 10 circulates. By this circulating hot air, bread, cakes, etc., being mounted on a shelf member 18 are baked. Also, by operating the plate fan 3 normally and reserve for every specified period of time to change the air direction, and in addition, by controlling the rotating velocity, the air volume is adjusted so as to correspond with the kinds and the amounts of articles to be baked, the hot air is thoroughly circulated in the baking chamber 100, and an unevenness in baking is prevented from generating.;COPYRIGHT: (C)1997,JPO
