PURPOSE: To obtain the subject composition having various uses as a calcium preparation highly absorbable in vivo or as a food or food additive not impairing flavor or taste by extracting good-quality calcium from sea urchin shells as a kind of fishery waste. CONSTITUTION: Sea urchin shells are baked at about 950-1150 deg.C in an oven into calcium oxide, which is then hydrated into calcium hydroxide, which is, in turn, reacted with an organic carboxylic acid to form a calcium salt, thus affording the objective sea urchin-derived calcium. The other objective composition is obtained by incorporating this calcium salt with chondroitinsulfuric acid or a salt thereof.
